This Week's Heart A'Peel Recipe
Southwestern Bean Salad/Dip
Makes 1-2 servings.Ingredients
Preparation
- 1 19-oz. can black beans, rinsed and drained
- 1 C. thawed frozen corn kernels
- 1/2 C. each,red and green bell peppers, diced
- 1/2 C. scallions/green onions, thinly sliced
- 2 Tbls. fresh cilantro, finely chopped
- 3/4 C. chunky salsa
- 2 tsp. fresh lime juice
- 1 tsp. ground cumin
- In a large nonreactive bowl, combine all ingredients. Refrigerate, covered, until chilled, at least 2 hours. This is delicious used as a salad, a dip or wrapped in a whole wheat tortilla and eaten like a burrito.
