This Week's Heart A'Peel Recipe
Hawaiian Chicken
Makes 1-2 servings.
Ingredients
- 2 tsp. olive oil
- 1 C. boneless, skinless chicken breast strips
- 1/2 C. each, red and green bell peppers, carrots, mushrooms, green onion
- 1 tsp. minced gingerroot
- 1 C. fresh peapods, sliced
- 1/3 C. pineapple juice
- 2 Tbls. Teriyaki sauce
- 1 tsp. cornstarch
- 1/2C. drained pineapple tidbits
Preparation
- Saute chicken and oil. Add vegetables and ginger. Saute 2-3 min. Mix together pineapple juice, teriyaki sauce and cornstarch. Add to vegetable and chicken mixture and stir. Add pineapple tidbits. Stir and simmer until mixture is thick. Serve over brown rice.
