  1. Cut chicken breasts into small cubes and slice or chop your vegetables, and the green onions that you'll use for a garnish..
  2. Heat olive oil in a large saucepan over medium-high heat.
  3. When the oil is good and hot, add the chicken and vegetables.
  4. Cook the mixture for about five minutes, then stir in the chicken broth, green chilies, and spice blend.
  5. Reduce the heat to medium and simmer for about 15 minutes.
  6. Stir in the beans and simmer for about another five minutes.
  7. Top with the sliced green onions and garnish with the grated cheese.
