This Week's Heart A'Peel Recipe
Southwest White Chili
Makes four large servings.Ingredients
Southwest Spice Blend
- 2 tsp. olive oil
- 12 oz. boneless, skinless chicken breasts
- Onions, peppers, carrots, mushrooms, zucchini or other vegetables
- 1 cup chicken broth
- 1 small can (4 oz.) green chilies
- 2 cans (about 19 oz.) white kidney beans (cannelloni) or Great Northern white beans
- 2 green onions
- 1/4 cup grated cheese (low fat)
Preparation
- 1 Tsp. garlic powder
- 1 Tsp. ground cumin
- 1/2 Tsp. oregano leaves
- 1/2 Tsp. cilantro leaves
- 1/8 Tsp. ground red pepper
- Cut chicken breasts into small cubes and slice or chop your vegetables, and the green onions that you'll use for a garnish..
- Heat olive oil in a large saucepan over medium-high heat.
- When the oil is good and hot, add the chicken and vegetables.
- Cook the mixture for about five minutes, then stir in the chicken broth, green chilies, and spice blend.
- Reduce the heat to medium and simmer for about 15 minutes.
- Stir in the beans and simmer for about another five minutes.
- Top with the sliced green onions and garnish with the grated cheese.
